So, not technically a perfect week of ayurvedic packed lunches because fresh fruit isn’t the best when paired with a meal, but pretty good. Especially considering we are almost completely out of groceries over here. Trailmix (raisins, apricots, sunflower seeds, banana chips) was our saviour this week, and I used up the very last bits of goat cheese and veggies and crackers and crumbs in the kitchen. Can’t wait for our monthly Costco trip coming up in a few days! Fyi, that’s kamut flour linguini and a spelt flour chocolate chip cookie.
Luckily I stopped by Ikea this week so I grabbed some veggie balls (which Big Son adores) and these vegan alphabet cookies which I added to the trailmix.
Here is Polar Bear’s grown up version of the above lunch, which I thought was lovely. However that’s homemade hummus (we usually use Costco hummus), and it was passable but not the best. Anyone have a truly amazing hummus recipe?
There go the last crackers in the house and the last spelt molasses cookie in the freezer.
And on Friday when I was truly stretched thin I made this grilled veggie sandwich – a trick I picked up from a South Indian mom when I was her teenage babysitter. That’s a potato and red cabbage veggie dish we had for supper the night before, mashed and put into a grilled sandwich in place of cheese. (Actually this is also the way I served the dish to Big Son at supper and he happily ate 2 of them, along with the string beans!)
