That’s gobi paratha, or cauliflower stuffed flatbread, that we had for dinner the night before.
On days when I make pancakes for breakfast I make a few little silver dollar pancakes for the lunch box (or save Sunday morning pancakes for the Monday lunch box). I used to send a little dipper of maple syrup but we found it too messy, so I switched to little pancake and jam sandwiches.
